What to expect

Our marmalade making workshop begins when we arrive at the picturesque rural estate in Inland Dalmatia, near Sibenik, set in a peaceful and relaxing ambient. We will be warmly greeted by our today’s host as we sip on some home made Croatian brandy – rakija. Obviously, rakija will be made of the same fruit we’ll be using to make marmalade later on. Afterwards we will take a look around this lovely agritourism estate with rustically built stone houses, a traditional Dalmatian tavern and exceptional nature that surrounds them. You will be enchanted by many authentic details reflecting past times and beautiful plants and fruits on a wide, green area. If there is time, we will even be picking the fruits for the marmalade ourselves. After a little mid afternoon pick me up, it’s time to go behind the scenes, to the heart of this household – the kitchen! You will be given introduction to the art of preserving and taken through the entire marmalade making process from start to finish. You will learn how marmalade is made, how should it look and feel, how to cut fruit, what do to and what not to do. When you walk out this class you will have the basic understanding of jar sterilization and safe canning techniques. When the pot with marmalade has finally found its way to the stove, we will take advantage of a short break to taste some traditional Dalmatian snacks and a glass of home-made wine. The reward for our work comes as we get a taste of this freshly prepared treat before pouring it into the pots and canning them. At the end of your class, to cherish the memory of your first marmalade-making session in this truly magical ambience, you will get one batch of delicious home-made marmalade from our host to give as a gift or share at home with your friends.
